Luminus COBs have a specific point where a thermocouple should be attached during temperature measurement. This point is indicated with a black dot.
Measuring the temperature with a TC at other positions will produce inconsistent results and is not recommended. Attaching a TC to the light emitting surface (LES) of a COB will produce particularly poor results. The light absorbed by the TC will cause it to measure a temperature well above the actual temperature of the LEDs and the substrate.

Luminus recommends using fine wire thermocouples such as this 44 AWG Type K example in the following link.
The temperatures that COBs operate at allow most thermocouple types to be used. The thermocouple type selection will depend more on compatibility with the TC reader and cost rather than any environmental considerations.
Thermocouples should be glued to the test point. The adhesive should be thermally conductive, such as https://www.omega.com/en-us/accessories/adhesives-and-paste/p/OB-100-OB-200-OT-200.
